Chocolate baked yogurt cheesecake recipe without cheese

  Baked yogurt or bhapa doi is a traditional Bengali dessert very easy to prepare with curd and condensed milk.In olden days this mixture used to be steamed due to the absence of oven .Now you can do the steaming process in the oven itself by filling the tray with water and baking the mixture .The result is a thick set pudding ,sweet and slight tangy , creamy and very versatile.You can make a enormous number of varieties from these. in spite of being so easy to prepare I haven't tried my hands on these until I had a home dining meal ,where the diner wanted baked yogurt as a dessert .I prepared vanilla flavored baked yogurt before hand  in small muffin cups and they were very much liked by every diner.I decided to take my creativity a level further and prepared this   cake  by   filling baked yogurt on a crispy oats base and the result was more than overwhelming.This is a cheesecake without cheese and can be relished by people who are looking for a low calorie option and devour on cheesecake. vanilla flavored baked yogurt

Ingredients Base
  • 1 cup Oats powdered
  • 1 cup brown sugar powdered
  • 50 gm butter
Filling
  • 1 cup unsweetened curd
  • 100 gm dark chocolate
  • 1 cup milk
  • 1 cup sweet condensed milk
  • 1 cup fresh/whipped cream
Topping
  • 100 gm chocolate
  • 1/2 cup cream
Preparation
  • Grease a spring-form cake tin
  • Mix powdered oats with frozen butter crumbled and sugar to form a semi dough mixture.
  • Line the bottom of a spring-form tray with this mixture.
  • For the filling melt chocolate
  • Heat the milk
  • Mix chocolate with milk first.
  • Add yogurt and mix
  • Add condensed milk and cream and mix.You can use a mixer to form a smooth mixture.
  • pour this mixture over the base and bake for 20 to 30  minutes  at 170 degrees on a tray filled with water .
  • Check if the top of the cake is set.Don't over bake.
  • Take out of oven and let it cool in normal temperature .
  • Melt chocolate for the topping and mix with cream and beat to make a smooth chocolate sauce. If its too thick ,You can add little milk and heat again in microwave. the chocolate sauce should be of pouring consistency.
  • Pour on the cake and keep  in refrigerator to chill for at least 3 to 4 hours before serving.

    I would not have known that such a delicious dish existed  ,if I had missed Lisa Watson's wonderful post on twitter about the Easter Recipes.She is a gem of a writer and a chef ,you can read about the history of this wonderful dish ,in her blog.Easter Sunday is celebrated throughout the world to  commemorate Lord Jesus Christ's resurrection from death after his Crucifixion by the Romans.In India Easter is celebrated by the Christian in various parts of the country,and there is a traditional feast consisting of local festive dishes and eggs .Eggs definitely form the center of all Easter celebrations. Torta Pasqualina is  an Italian pie ,traditionally filled with Swiss chard and ricotta but I think a lot of variations can be prepared by substituting local veggies."Torta" word   refers to a sandwich  made with crusty bread roll served hot or cold. The specialty of this pie is that when you cut this pie you can see the egg  beautifully cooked inside the pie.The My improvisation to this dish however , was to replace the ricotta with our local cottage cheese as it is difficult to procure here and adding some Indian spices for the sharpness,as we love spicy food.I made separate layers of spinach and cottage cheese as I referred to Lisa's recipe ,but I think mixing of spinach and cottage cheese too will give a pretty and delicious filling like our traditional Indian "palak paneer" which is close to the heart of all Indians.I will like to try that version in future.

    Ingredients

    puff pastry dough

    • 4 cups flour
    • 1 cup warm water
    • 1/4 cup vegetable oil
    • salt to taste

    Filling

    • 2 cups of  spinach
    • 1 cup of  cottage cheese
    • 1 cup of grated cheddar and mozzarella or processed pizza cheese
    • 1 tsp roasted carom seeds
    • 1/2 cup onions chopped
    • 2 to 3 garlic cloves
    • 1 tbsp chilly flakes
    • 2 chopped green chilies
    • 1 tbsp Mixed Italian herbs(dried oregano,rosemary,basil)
    • 1 tsp Black pepper coarsely ground
    • eggs 6
    • butter 1/4 cup melted for brushing

    Preparation

    Filling (Layer 1)

    • Boil the spinach with little salt
    • Add 1/2 tsp  of oil in the pan and fry onions and garlic.
    • Add the spices (carom seeds,chilly flakes,green chilies,Italian herbs )followed by spinach and saute.
    • Cook till the water dries.
    • take off from the pan and chop the spinach very fine.

    • blend the cottage cheese with little salt
    • Add 1 egg and mix
    • Add black pepper powder

    Dough

    • Mix water,salt and oil together.
    • Add this mixture to the flour in batches while mixing with fingers till it forms a soft mixture.
    • knead this dough well and keep it covered.

    Pastry

    • Roll out layers from the dough
    • Make 4 medium sized balls of dough ,for 4 pastry sheets,two at the bottom,two for the top.
    • I still had some dough remaining.You can add more sheets if you want.
    • grease a spring-form cake pan
    • roll a ball of dough with the rolling pin as thin as possible.Lay it carefully over the pan.
    • brush with butter and add another layer.
    • fill with the spinach mixture.
    • add the cottage cheese mixture.
    • Make 5 small depressions with your finger .
    • Separate the egg yolk from the 5 eggs.
    • Add these egg yolks one by one into these depressions
    • pour over the egg white.
    • Sprinkle some salt.
    • cover with grated cheese.
    • cover the pie with more 2 to 3 layers of pastry sheet.
    • Brush the top with butter.
    • I decorated with some flour roses.
    • bake for 40 minutes,till the top is brown.

      • fill 3/4th of the muffin cups and bake for 30 minutes till the fork inserted comes clean.

      • melt 100 gms of chocolate in microwave by micro full for 40 seconds
      • mix the chocolate and hot cream together till it forms a rich sauce.
      • If the sauce is thick add little milk and heat the chocolate in microwave to form a runny sauce.
      • Pour over the cup cakes,till absorbed.

      Ragi Chocolate cake ball variation

      if you have these semi spherical molds,you can prepare the cakes in these molds and then join the two halves with chocolate sauce in between to form a chocolate cake ball.Dip these balls in chocolate sauce ,roll over some pretty sprinklers and allow them to cool.They form pretty looking interesting desserts enough to make the kids happy .       Nutritionist Naini Setalvat ...Health tips for a fit body

      The renowned nutritionist's talk was interesting with stories from her real life experiences.She spoke about ancient Ayurveda and emphasized on eating Sattvik food. Sattvik food which consists of vegetables,adequate spices and not overcooked ingredients, is best for the health of body and the mind. She also gave health tips and spoke about how food can control mood of an individual and even capable of  inducing  criminal behavior. The following points can be summarized from her wonderful talk.
      1. One should lead a simple lifestyle.
      2. One fruit a day is compulsory.
      3. Probiotics like milk,curd and pickles should be consumed ,during the day.
      4. After sunset ,the body craves for food,so one should have a early dinner,otherwise there is a chance of binge eating during the evening.
      5. Some healthy evening snacks should be kept ready for the kids during the evening.
      6. One should avoid fried food,junk food,caffeine ,alcohol and sugar as much as possible.
      7. "Follow your ecosystem",she informs,as some food which may be good in the Western countries may not be suitable for our body.
      8. "70% of the earth and body  is water,so to keep the balance in the body ,one should drink sufficient water",she advised.
      9. Fruits and dried fruits should be eaten as snacks to get instant energy and among the nuts cashew-nuts are the lowest in fat.

      The power packed panel moderated by the Co-founder of FBAI,Mr. Sameer Malkani gave wonderful insight of being healthy in body and the mind as summarized under:-
      • Kunal Vijaykar ,the famous TV personality ,stated "Eating healthy is eating less",he emphasized on cutting down portions.
      • Mira Manek, the author of "Saffron soul" ,highlighted about balancing food with exercise and discipline ,and narrated her experience with Indian spices and vegetables which she considers as extremely healthy.
      • Payel Kothari,Nutritionist and health coach ,stated that "Balanced meal is a rainbow of food and vegetables,All individuals are different ,so the diets will also be different".She also spoke about  changing the posture,consciously using words and journal-ling manifestations for a healthy mind and a fit body.
      • Tara Mahadevan,The nutrition and Weight loss psychologist ,requested the audience to understand the type of hunger ,whether the hunger is physical or emotional and then act accordingly.

      The panel consisted of   Saloni Malkani, Co-founder, FBAI,who was the moderator , Kalyan Karmakar, Food Writer and Blogger ,Smita Deo, Author and Blogger and Vaishali Shah, Lead Designer, Godrej Interio. They spoke about the modern kitchen and how lighting has become essential in the kitchen,to take good photographs ,as well as open kitchen space integrated with the dining helps to interact with the guests and the family members even during cooking. Kalyan Karmakar, asserted "Kitchen defines who you are " and  how the kitchen furniture and decor are very personal and defines the individuality of the family members. Smita Deo narrated her personal experience how she  refurbished her kitchen to give  a modern stylish look. Vaishali Lahoti Shah ,the designer explained the latest trends ,how kitchen has become more a social space where family can spend value time with each other and their friends.

      Chef David Cananzi.."Cut down on meat"

      The renowned talented Italian Chef Davide Cananzi spoke about the five components of food to include in the meal ,Vegetables,legumes,fruits,meat and tofu.He also emphasized on consuming organic ingredients and healthy oil like olive oil,canola oil and rice bran oil.He also advised to cut down on the meat content in the meal.

      It is a good news for those who love healthy nutritious and yet tasty food.I was attending a #wellness conference by FBAI and  was motivated to binge on healthy dishes .Apart from the Cantonese style dim-sums and the Japanese Sushi at Dashanzi ,there were also dishes like fish in black bean sauce,mutton curry,seafood noodles ,rice etc for the  main-course  which looked fascinating ,specially for those who prefer to eat in their comfort zones .To end with ,there was a plethora of divine mouthwatering desserts. yum cha dishes

      Drinks

      I drank only potions of health and freshness but signature cocktails were available  too.The carrot juice was naturally bitter sweet with a sharp taste coming from celery and sweetness from carrots.The beetroot juice and the wheat grass juice was equally refreshing and  rejuvenating for the body.       Sushi

      The sushi platter was excellent and with vibrant colored sauces made from natural colors . I thought that the black sauce would be squid ink but I was informed that the black sauce was prepared from charcoal powder and pink sauce from beetroot ,all from natural colors. Don't get amazed friends !The charcoal powder is a cooking ingredient and widely used for making breads,and exotic looking desserts.The sauce was tangy and tasted yum.The fillings ranged from vegetables to fish and light curated meat.Though I am not a Sushi expert ,I had sushi in a couple of places before and it had never tasted delicious like this ever.For vegetarians there was Yasai rolls ,packed with avocado ,sweet potato and cream cheese.The plating was so pretty,that the Sushi and Maki rolls looked like a necklace studded with colorful jewels on the table.       There was also kappa maki roll, the vegetarians will love. Maki roll is a type of sushi covered with nori sheet on the outside.It was stuffed with cucumber and wasabi and mayo . It was a little funny discovery that I thought "kappa" means cucumber in Japanese but the moment I expressed my thoughts at home ,my daughter came to the rescue and said that kappa is a frog like animal living in the water ,who loves to feed on cucumber,and hence the name.       Dim-sums

      The restaurant is a heaven for dimsum lovers,and I am litle biased towards dim-sums since my trip to Hongkong. I never had edamame truffle dumplings(Vegetarian) before and they tasted very unique to edamame are a kind of green beans which are boiled and made to a paste to form the main ingredient of the filling along with truffle oil.The texture of the filling was sandy and taste was divine. The chicken sieu mai and the prawn dimsums were pretty like little gift parcels ,and like a bomb of flavors they exploded in the mouth.       Desserts

        I have a sweet tooth and I love sweet dishes  but sweet and sour chicken is really unique but you will love it.I first had this dish during my trip in Hongkong and it was prepared with pork.The pork pieces were tender ,sweet and delicious ,though I would have loved it a little more spicy but Cantonese dishes are loved the way they are originally, mild spicy retaining the flavors of the meat.you can reduce the sugar in this dish if you want,but caramelized sugar is necessary in this...

      Sweet and sour pineapple chicken

      Ingredients

      • 400 gm boneless chicken
      • 1/2 cup pineapple pieces 
      • 2 to 3 tbsp Sugar ((you can reduce it if your pineapple is very sweet))
      • 3 tbsp Rice wine Vinegar
      • 1 tbsp Black pepper powder
      • 2 tbsp garlic
      • One cup chopped onion
      • 1/2 cup chopped capsicum
      • 3/4 cup pineapple juice
      • 1 tsp soy sauce
      • 2 to 3 green chilies chopped fine (( 2 to 3  or more if you want it very spicy))
      • 2 tbsp cornflour and refined flour 2 tbsp made to a batter with water
      • 1 tsp cornflour for the sauce.
      • 1/2 cup chicken stock
      • Salt
      • 1 cup oil for frying

      Preparation

      1. frying the chicken
      2. marinate the boneless chicken pieces in 2 tbsp of vinegar and black pepper powder and salt for 15 to 20 minutes.
      3. heat the oil in the pan
      4. dip the chicken pieces in the cornflour batter  and deep fry them in oil till light brown.drain and keep aside.

      making the sauce

      1. Add the sugar directly in the pan and allow to melt forming a golden liquid.
      2. Add pineapple juice
      3. Add soy sauce and vinegar.
      4. Check the salt,add if required.
      5. you can add the green chilies and mix .
      6. Add stock with 1 tsp cornflour  dissolved and boil till it forms a thick sauce.Switch off the gas and keep aside.

      Mixing and tempering the chicken

      1. Heat 1 tbsp oil in the pan.
      2. Fry onions till translucent .
      3. Add capsicum and pine apple pieces and cook till tender.Add little salt.
      4. Add chicken and cover cook for the flavors to fuse together.
      5. add the sauce and mix now.
      6. Serve hot with fried rice.
