    DIY Lebanese Spicy Meat Pie Recipe

    Directions:

    1. To make the dough, sift all the dry ingredients together
    2. In a bowl, beat the egg alone, then add it to the dough & start kneading
    3. Add Oil and warm water to the dough one by one while kneading, then keep kneading until the dough becomes coherent.
    4. Keep kneading for 5 minutes then roll the dough like balls then put it in a pot covering it with clean cloth; put the pot in a warm place until the dough gets bigger.
    5. In the meantime prepare the filling by putting the margarine in a pot on a medium fire
    6. Add the meat, onions; flavor it with the salt, and pepper
    7. Then add tomato and flavor it with spices
    8. Leave the meat until it’s cooked, then add the pomegranate molasses, and tahini, mix them together for a minute then turn off the fire.
    9. Add Lemon then leave it until the filling is cool
    10. Preheat oven to 190°F
    11. Add on the top of it a little bit of flour, and extend the dough then circulate it, and extend it using rolling pin
    12. Fill the dough with the filling then close the parties only, and keep it open from the middle
    13. Put it in tray and bake it in oven
    14. Bake it until it becomes light golden then turn off the oven and serve it.

    • 4 cups of fresh pomegranate juice

    • 1/3 cup of fresh lemon juice

     

    Easy Way to Make Healthy Pomegranate Molasses Sauce Recipe at Home

    Method:

    Step 1- Mix the three ingredients in a saucepan

     

    Step 2- Stir continuously over low heat until sugar dissolves. Simmer it for 60-80 minutes and stir them every 10 minutes till the amount of liquid has been boiled down to about one cup or so.

     

    Step 3- Once the liquid becomes sauce, test it by dipping the spoon in. If a deep reddish purple sauce coats the spoon, your molasses is done! Do not overcook it not to be turned into a very thick and stiff liquid when cooling.

     

    Step 4- Remove the saucepan from heat and you’ll find that you end up with about 1 or 1 1/4 cup as a maximum. If you found it more than that, cook it for a while again. Let the molasses cool then store it in airtight glass jar in the refrigerator for four weeks.

     

    Now, you have prepared your Pomegranate molasses!

    One kilogram of minced meat

    1 ½ kilogram of minced onions

    1 tablespoon of sumac

    2 cups of vegetable oil to fry

    1 tablespoon of starch and melt it in a cup of cold water

    Directions

    • Wash the bulgur and drain it. Put bulgur in a bowl with two cups of water for fifteen minutes, then grind it with electricity mill with the softest blade, then grind it again with meat, and onion (You should grind it twice).
    • Put the mixture in a big bowl, then start to add salt, pepper, hot sauce pepper, and spices, using your hands to make like a dough without adding more water even if the dough was thick, then put it in a nylon bag then put it in the fridge.
    • For the filling: Put a pot in a fire then add oil, then add onions stir it for 3 minutes, then add the minced meat, and mix it well so it won’t conglomerate.   
    • When the meat’s color starts to change, put the salt, pepper, and spices without sumac, and mix it until it is cooked well..
    • When it is cooked perfectly turn off the fire, and add the sumac, then mix the mixture and put it in a soft colander, and left it till it becomes cold.. 
    • To make the fried Kibbeh you split the dough to small balls, or as egg sized, and make a hole in the dough by using index finger, and fill it with the cold meat, then close the dough by dip your fingers with the water and starch then start to close it…
    • Heat the oil in a deep fryer and fry the Kibbeh’s balls until it becomes brown, use some paper towels to drain them, and serve them with yogurt.

    The Seven Spices Are:

    Cinnamon, Black pepper, True cardamom, nutmeg, piper cubeba, ginger & dried clovers

    5. A little bit of minced soft parsley.
    6. One onion.
    7. A little bit of Spices ” 3 Laurus nobilis, ½ teaspoon of black pepper, 5 Cardamom pods, ½ teaspoon of Cinnamon powder”
    8. 5 of Yufka
    9. 2 Teaspoon of salt
    10. Teaspoon of Turmeric powder

    Jordanian Mansaf with Al-Jameed Milk, Rice and Yufka Recipe

    Directions

    1. Boil the meat in the water with onions and spices till it is cooked perfectly.
    2. The buttermilk dissolves with one spoon of starch + 3 cups of meat’s broth, and continue stir regularly until it boils.
    3. Wash the rice with running water, left it for 15 minutes, then drain the rice. Put in a pot a little bit of margarine, or oil, then add the rice with stirring for 3 minutes until toast it.
    4. Add Teaspoon of Turmeric powder, then add meat’s broth, or water with salt as per taste until it cooked.
    5.   4. Put the Yufka bread in a tray, then add some of meat’s broth, the rice, then the meat after that the cooked milk, or Al-Jameed milk, the nuts, and parsley.

    Directions

    In a deep pot, put the milk on the fire until it gets hot, and then add the Semolina and mastic with continuous stir till it becomes thick like pudding.

     

    Turn off the fire and pour it in a Pyrex tray, or Baking pan then put it in the fridge until it becomes cool then spreading the can of cream, add the pistachios on the top of it, then put it on the fridge for two hours.

    When you get it out, pour the Syrup on the top of it.
